Support the culinary team by preparing food items in accordance with assigned sections, adhering to company recipes and stringent food safety standards.
Follow the directives of your superior to uphold the highest standards in food production and presentation, ensuring proper portion and quality control.
Maintain compliance with food safety and sanitation regulations, including HACCP protocols, in your designated area.
Execute all tasks efficiently and correctly, in line with company policies and the training manual, with the aim of achieving total guest satisfaction.
Communicate respectfully and professionally with the Executive Chef and Sous Chef.
Adhere to management guidelines and directives with maximum efficiency.
Prepare side dishes, soups, and hot appetizers to be served fresh during each service, while monitoring production levels to ensure an adequate food supply.
Mentor Assistant Cooks in food preparation, emphasizing the importance of cooking times.
Ensure all kitchen equipment is maintained in good working order and report any maintenance issues to supervisors.
Familiarize all galley personnel with equipment handling and cleaning procedures.
Lead by example to encourage effective working methods among team members.
Facilitate open communication with all staff members.
Assist new galley crew in understanding their responsibilities and integrating into the team.
Ensure that crew members adhere to their job descriptions and established standards.
Maintain a clean workstation daily, following Mystic Ocean's cleaning standards.
Implement good workplace practices and enforce HACCP/SHIPSAN principles.
Gain knowledge of all galley departments and their interactions.
Check your workstation before each shift, using the appropriate checklist.
Keep a sanitized and organized working environment.
Minimize food waste and efficiently utilize food surpluses.
Be willing to work overtime if required.
Dispose of any food items that do not meet company safety standards.
Adhere to personal hygiene protocols, including proper head coverings, managing facial hair, and maintaining a smoke-free and phone-free work environment.
