Primary Role:
- Oversee the Kitchen Stewarding team within the Culinary Department.
- Responsible for the upkeep and care of all Food and Beverage operational equipment.
- Ensure the kitchen staff maintains cleanliness in all kitchen areas.
- Report any issues affecting the interests of Grand Mercure Gopalan Mall Bengaluru to Management.
- Assume additional responsibilities as assigned by Management.
Key Responsibilities:
People Management
- Ensure the team is trained on all safety protocols.
- Maintain cleanliness and personal hygiene standards for Culinary Department personnel.
- Encourage and develop staff to facilitate smooth departmental operations and teamwork.
Operational Management
- Guarantee that Kitchen Stewarding Associates uphold the quality of dishwashing machines for chinaware, glass, and flatware.
- Ensure thorough cleaning and polishing of tableware, crockery, and glassware.
- Monitor the grooming and hygiene of the team.
- Maintain quality and cleanliness across all kitchen functions.
- Ensure timely clearing of tables vacated by guests for quick turnover.
- Uphold proper sanitation and hygiene in kitchen and service areas.
- Oversee overall kitchen cleanliness.
- Adhere to the hotel’s mission statement, departmental goals, and specific section objectives.
- Manage banquet event assignments as necessary.
- Supervise kitchen staff not engaged in cooking to ensure efficient and economical food service.
- Ensure that the following areas remain clean: kitchen, pantry, designated backhouse areas, service lift, steward stores, main dishwashing area, and steward counter.
Additional Terms & Conditions
- a. You may be required to work extended hours or stay back as necessary during hotel operations.
- b. Flexibility for night shifts or various shifts as per departmental needs is required.
